i guess i would say closer to medium rare.... If the quality of the meat is really good, it maintains a certain firmness you usually get in more cooked meat, thereby making it easier to eat it more rare.

It's not bad. If I had to choose well-done or rare, I'd go with rare every time (strictly speaking steak). I'd just go with ground beef if I was going to go well-done with a steak.

i love it medium well. well done is just to dry for me. hell i'll have it medium too but rather have it medium well :)

I just had a delicious medium rare ribeye last night. I can't believe how many of you guys like to ruin your steaks by cooking them medium well. :D :D :D

I wonder if there's a correlation to where you live and the temperature one prefers their meat? Of all the hilljacks I've met in Ohio, they tend to like their meat med-well to well, while my more urban friends always prefer their meat rare/med-rare.

Because, cooking past medium leaves a piece of meat dry, tasteless and not tender. Why would you want to ruin such a fine cut of meat by cooking it to death?

Where I come from, it's a sin to cook steaks past medium-rare, especially Ribeyes!

You might be on to something. My wife grew up out in the boonies and never ate a medium-rare steak until she met me. :)

Pricey steakhouse actively discourage diners from getting steaks cooked more than medium. IMO, if you go med.well/well-done, you might as well eat a hamburger without the bun.

In a restaurant I generally get it cooked medium. At home, I cook either medium or medium well because I know that doing it myself I can still keep it tender and juicy.

You might be on to something. My wife grew up out in the boonies and never ate a medium-rare steak until she met me. :)
I think a lot of it is also based on the fear of cooking out potential food born illnesses.
For instance, when growing up in my parents house, I remember them always cooking the snot out the meat. My mom would freak if she saw a little pink in the steak or pork. She would say you can get "worms" or "mad cow disease" from eating undercooked meat. Lol.
I would later learn in life that if you buy a decent cut of meat, you can eat it raw and be perfectly fine.

Haha, not what I meant at all. Although I will say that I like the taste of A1 on many types of meat.

yeah i agree. i don't use any sauce on a ribeye,porterhouse etc etc...... and medium well always comes out extremely juicy for me. full of flavor. i've had medium or medium rare and no way. don't like the bloody taste. i wanna taste the meat not the blood. but i forget that there's a vampire trend going around :D

I prefer medium myself, if it is still bleeding it can always be cooked a bit more.

I still say that you "rare" guys just havent had a properly cooked medium/medium well steak.
As for the sauce, sometimes I like it, sometimes I dont. Just cooked a filet mignon tonight, medium (to medium well), and it was so juicy and tender........no sauce on it, obviously not needed.

I like medium rare to medium. My dad grills the best medium steak I've ever had in my life and I'm slowly working on copying everything he does to make mine just as perfect.
